Easy Summer Pizza for One

1 Tomato

1 cup shredded Mozzarella

3-4 fresh Basil leaves

Olive oil, garlic, salt & pepper

1 flour Tortilla

Brush the tortilla with olive oil, spread some diced garlic on top and sprinkle with salt. Place on a foil lined baking sheet in a 450F oven just until lightly browned. Sprinkle diced tomato, basil and mozzarella on top. Give it one last shake of salt. Bake just until cheese is melted. Serve with olive oil for dipping. Yum!

I guess August is here. Which seems really strange for some reason. I’m not sure why. Perhaps because it means that this year is more than half way over (in four months we’ll be listening to Christmas music – really???). Perhaps because I have less than three weeks before I start my fall semester. Perhaps because the temps have been ridiculous lately. Wow. I love summer, but when it’s 100F in the shade, I am amazed…and thankful for A.C. and pools and shorts and flip-flops and sno-cones and fans and tank tops and sunscreen…

Mom and Lydia and I have finished our second summer Bible study through the LPM Blog. We are having dinner at our place to celebrate the final session. It will be very cosmopolitan: bruschetta (Italian) as the appetizer, curried chicken w/dried fruit couscous (Indian) as the main dish and Banoffee pie (English) with Starbuck’s coffee (American!) for dessert. I plan to post pictures and recipes from our dinner party sometime in the coming week. It should be fun and delicious!
