homemade tomato soup

I realize the days for soup are quickly coming to a close. Soon it will be salads and grilling out and warm weather dishes that are calling my name even as I type this.

But I made this the other night and – since March/April can be a little finicky as far as temperatures are concerned – I thought I would post the recipe.

1/4 onion, chopped
1 clove garlic, minced
2 tbsp olive oil
1 can diced tomatoes (16 oz.)
2 cups milk
1 cup heavy whipping cream (and some for drizzling)
1 tsp salt
1/2 tsp ground black pepper
2-3 dashes of Worcestershire sauce
2-3 dashes of S’riracha hot chili sauce (on the Oriental aisle of most grocery stores)

  • Saute garlic and onion in olive oil just until onion becomes tender.
  • Pulse tomatoes and onion/garlic mixture in a blender until desired consistency is reached.
  • Pour into a soup pot and add milk and cream, whisking slowly.
  • Add remaining ingredients and cook over medium heat until heated through.

Serve with a drizzle of cream on top and grilled cheese or crackers or garlic bread or biscuits hot out of the oven – the options are endless – on the side 😉 Enjoy!
